Regions and Their Produce
Tasmania
Nature has been extremely generous to Tasmania. Surrounded by
water and far enough south to have a wonderful temperate climate, it produces
some of the best produce in Australia. Unlike other parts of this very
crowded planet Tasmania is fortunate to have a small population and lots
of creative people who have used it’s abundant pantry to produce
a great variety of wonderful products.
Our pristine forests provide some of the best habitat for the production
of the worlds rarest honey. Every summer bees are taken into the rain
forests where they find the white flowers of the leatherwood tree to produce
their unique tasting honey.
Fruits, berries and vegetables are produced from the rich farmlands of
southern and northern Tasmania to produce a variety of jams, sauces and
preserves. The oldest bottles of wine known to exist in Australia can
be found in an old cellar in New Town, next door to the site of Hobart’s
first recorded vineyard.
Today there are over 120 vineyards around all parts of Tasmania. Most
are small family hands on operations, others are larger with sophisticated
cellar door sale and wonderful restaurants.
Tasmania is known for its production of Riesling, Chardonnays, Pinot Gris
(Grigio), Sauvignon Blanc and Pinot Noir.

A rich mixture of Tasmanian tree-ripened peaches and Australian
citrus fruit, produced in small batches for maximum flavour. This

breakfast. Try it too as a sponge cake filling with cream. |

Tasmania is well known for its fabulous berry fruits. This magnificent

Island Riesling
Produced in the temperate climate of Northern Tasmania with its
cool ripening conditions this Riesling has an aromatic, light and
fresh taste for which Tasmanian wines are renowned. The wine has
delicate floral aromas, citrus and stone fruit flavours on the palate
and a dry finish, making it a perfect food wine. |

Ingredients:
Plums, Sugar, Onions, Vinegar, sultanas, spices and salt.
This Tasmanian Chutney is rich and fruity with the distinctive flavour
of the Tasmanian Pepperberry. Serve with spicy foods, cheeses and
hot and cold meats. This wonderful sauce is excellent for glazing
on lamb, beef and pork. |

Honey Co. Leatherwood Honey
This quality honey comes from the pristine wilderness of South-west
Tasmania. Every summer the bees are taken into the rainforests where
they find the white flower of the leatherwood tree. The honey they
provide from the leatherwood nectar has a distinctive spicy aroma
and a strong piquant flavour that is sought by connoisseurs of honey
the world over. Unlike many other honeys, this honey has not been
filtered or heated, so it comes to you just as its found; the pure,
natural flavours intact, and a fine candied texture. |

| Coombend
Extra Virgin Olive Oil
Coombend olives are grown on the estate in the clear temperate climate
of Tasmania’s Freycinet coast where they become plump and
ripen during the long warm autumn days. The trees are individually
pruned and the olives hand picked, and then pressed on site without
the use of chemicals to retain all the flavour of the olive and
to maximise the health giving qualities. The oil is rich, nutty
and fruity with subtle pungency and a lingering peppery finish. |

Hunter Valley
The
Hunter Valley, less than two hours north of Sydney, is Australias oldest
wine region. James Busby first planted vine cuttings along the Hunter
River in the 1830’s. The marriage of food and wine have played an
integral role in the Hunter Valley having earned its’ reputation
as Australias premier wine tourism destination. The produce chosen for
our presentation packages aim at showcasing the best the region has to
offer.
| Bimbadgen
Verjuice
Renowned for producing magnificent, distinctive premium Hunter Wines
this fabulous Verjuice is derived from the French Vert Jus or green
juice. It is made from under ripe Semillon grapes. Its’ purpose
in cooking is to provide a perfect balance. Historically it was
found in French recipes from the middle ages. In cooking use it
as the acid component to give balance to flavour by adding sharpness
(better than vinegar or lemon) to sauces, dressings, in a pan deglaze
or reduction sauces. Once you have used it you will wonder how you
managed without it. |

This is a dry red table wine to be enjoyed over the next five years.

Yarra Valley
The
Yarra Valley is recognised as one of the worlds great wine growing regions.
The picturesque Yarra Valley is situated less than 40 minutes drive from
Melbourne. It has much more than vineyards alone with acres of lush
grazing pastures, tall and ancient forests, ferny gullies in the gentle
mountains of the Dandenongs and the Ranges. This landscape has inspired
many creative chefs to create a variety of delicious products ranging
from olive oils, fine chocolates, fruit vinegars, chutney's, jams and
relishes. Cafes and restaurants, dot the landscape offering a range of
culinary experiences from country style to the elegance of five star formal
dining with menus featuring fresh seasonal local produce and wines.
| Grovedale
Extra Virgin Olive Oil
A pleasant blend of extra virgin olive oil grown in the hills of
Kangaroo Ground on the edge of the Yarra Vallley. This oil has a
wonderful flavour and is perfect for salads etc. |

Valley Red Wine Jus - Batch 264
Red wine jus is perfect on any meat dish. To serve simply add to
the pan juices once your meat is cooler or alternatively reduce
down and serve with hot meat. Also makes a great marinade for your
summer barbecues. |

Pickle
This is the most traditional of pickles dating back to the turn
of the then 18th century. A delicious tangy tart spread for cold
meats and sandwiches. Serve as part of a ploughmans lunch of with

A respected author and chief, Anne takes seasonal delights from
her garden and creates magnificent sauces, jams, chutneys and relishes

| Rochford’s
Yarra Valley Cabernet
Merlot 2001
Produced from our Eyton vineyard located in the Yarra Valley this
wine is a blend of Cabernet Sauvignon, Cabernet Franc and Merlot,
which has been aged for 18 months in French oak barriques. Prior
to bottling this wine received a traditional fining with egg white. |

A traditional relish with a blend of beautiful flavours. Wonderful
